on the fly..

Deviating from a recipe, for me, is pretty scary. However, it is really cold out in nyc and i was determined not to leave the house just so I could get a few missing ingredients. Instead, I decided to wing it and see if it would turn out ok. (it did)

OK, these are all approx. measurements. . except for the 1 lb pork tenderloin

1 lb pork tenderloin (from local butcher if possible!)
Approximately 1/2 cup vegetable oil
1 1/2 tsp ground ginger
1 chopped clove of garlic
1/2 sliced shallot
2 tsp ground pepper
1 tbsp honey
1/8 c bragg's liquid aminos
2 tsp dried rosemary, crushed

i mixed together all ingredients and then put chopped pork tenderloins in. Covered with aluminum, I put the marinating pork in the fridge and left it for two hours.
I would have left it for longer, but dinner for two turned into dinner for one and i was hungry!
I threw some broccoli, whole garlic cloves, a sliced orange pepper and some olive oil in the oven and I was eating dinner and reading a book within half an hour.
Take that, Rachael Ray!
